Also, he has lived for centuries so I think that apart from turning straw to gold, he could have had time for another hobby, like writing a diary!

EDIT: Whoa! I may have to take some of that back! I'm re-watching the episode and Rumple says a line "True love miss swan; The only magic powerful enough to transcend realms and break any curse." So, maybe, for whatever reason, only Jefferson WAS pulled out of Wonderland.
Okay, so new Theory - Jefferson acquired his Hat from Rumple. That's how Rumple knew of Jefferson.
