So, far we know from the OUAT panel:

-Will be revealing the identity of Dr Whale this season.
-Sheriff Graham made a guest appearance during a spoof of a dating site video Singlebrooke.
-“Everyone says “Go back to…” but we don’t know if there’s anything to go back to.” – Eddy Kitsis
-We will find out who Henry’s father is in season two.
-A musical episode of Once may happen at some point. (JK!)
– We’ll meet Herbie this year (yes, as in the magic car). Possibly Emma’s yellow bug?
-Ginny & Josh say they were worried about all the fans leaking spoilers when they are watching shoots
“Children do run from me. And so do some adults.” – Lana Parrilla
-The LOST Co-star Emily de Ravin would be most excited to work with again is Terry O’Quinn
-Want to bring international storytelling to the show. Read that as folk tales and legends on a global scale. (Hence the globes in Mr. Gold’s office?)
-“Thanks to you guys we have the opportunity to tell more stories this year. ” – Adam Horowitz
-Captain Hook is coming to SB this year – see the new S2 promo! Looks like we’re going to see Peter Pan after all!
-We’re going to see Jack and the Beanstalk in Season 2!
-The story of Rumpel’s son, Bae, will be revisited this year.
-Jennifer Morrison knows who Henry’s father is. The rest of the cast wants to know. We’ll find out in Season 2.
-Favorite fairytales? Kitsis likes Peter Pan. Horowitz liked Snow White. Parilla answer Hansel and Gretel cause she could never have candy. Ory loved the Little Mermaid, to be under the sea. de Ravin never really got into them, she watched a lot of Hitchcock. Maybe Pippi Longstocking.
-Emilie de Ravin is asked how she keeps a straight face when filming with Robert Carlyle. Answer: “Many, many takes.”
-Jennifer Morrison and Lana Parrilla didn’t have any stunt doubles during their fight scenes – and they had the bruises to prove it!
-The net scene from 1×3 landed Ginnifer Goodwin in the hospital.
-We may meet Emma’s foster parents. Jennifer Morrison is very keen, saying, “It’s obviously really affected who she is a person.” Definitely expect more of her back-story in S2!
-Cast was surprised by the first couple of scripts for season 2 – but in a good way. Ginnifer Goodwin remarked that it was exactly what she’d want to see as a fan. “I never could have conceived of the brilliance of the first couple of [S2] scripts,” said Ginnifer.
-Edward Kitsis and Adam Horowitz said Ariel and Aladdin could show up “someday.”
-Ruby will be able to phase into a wolf in SB, but exactly what that means for her is yet to be revealed.
– Since we know Sleeping Beauty will be showcased in S2, could Maleficent? “I didn’t see her body,” Kitsis and Horowtiz teased in unison.
-Added Kitsis: “The show is not going to change from the one you loved last year…we’re still going to go back and forth and meet new people along the way.“
-We’ll learn why certain parts of fairy tale land — like Snow White’s glass coffin — appeared in the real world in the finale. The producers also noted that the show will still go back and forth between SB and fairy tale land, and they won’t be erasing everyone’s extra memories from SB.
