Rumpel was known by reputation as the “Dark One” but not by name to Smee. He gave his name when he re-introduced himself to Killian Jones and his crew on the backstreet outside the tavern. However, since the pirates all ended up in Neverland, I’m not sure if anyone left alive in the Enchanted Forest would remember his name, since Rumpel is 300 years old. In the original Rumplestiltskin fairy-tale, the miller’s daughter had to guess the imp’s name in order to keep her first-born child. By then, his name might have been lost to history, and the only way Cora learned his name way by spying on him. Also, in 2×2, Henry Sr. told Regina that Cora never said Rumpelstiltksin’s name, even to him. It wasn’t until Regina became the Evil Queen that we start hearing citizens of the EF say the Dark One’s name. We heard it said in the pilot, for example. By then, he was locked up and his name was widely known.

Yes, there do seem to be periods of time when Rumple’s name is not known and periods of time when it is. Maybe this will come into play with the whole Cora/miller’s daughter thing (like you said).

Snow didn’t know of him before Red told her, and even Red only knew of him via rumours, not because he was a celeb that everyone knew. So Regina must have kept her dealings with him and his identity a secret, if even her step daughter hadn’t heard of him.

I’m gonna guess that once Snow knew, that’s when his name started to become common knowledge again, because it’s not like she’d go out of her way to protect his secret.
