The only reason I take issue with Pinocchio’s hair and eye(?) color changing is that when Mr Gold figured out that August wasn’t Bae, August taunted him a little bit saying, “Do I even look like him?”. That sort of indicates that The adult should bear some resemblance to the child. That’s my only beef.
That line actually made me chuckle because I automatically took it as a shoutout to this exact debate amongst the fans. 😉 We know that the powers that be read forums, and August’s appearance had been much debated when people were trying to prove or disprove who he is. So I took that line as a snarky little, “Yep, we see whatchu all argue about,” from the writers. LOL

So, why couldn’t the casting director do the same with Pinocchio?
I wonder if the casting process is a bit different when you’re casting the adult version of a child you already have. Eion wouldn’t have been cast until way after Jakob was, because when they cast Jakob for the pilot, they didn’t even know for sure if the show would get the go ahead.
When it did come to casting for August, they couldn’t merely go on looks, they needed an adult actor who could deliver the character as they wanted him to be, and acting styles vary. Maybe there was someone else who auditioned for the part who looked more like Jakob, but he just wasn’t right for the role, we don’t know. Though I think that despite the hair/eye colour, the actors do actually look very similar.
I think it was freakish good luck when they scored Bailee to play young Snow. Not only did she look like a MiniGinny, but the kid was a brilliant actor who obviously studied Ginny’s mannerisms and was able to incorporate them into her performance, which made the resemblance eerie. That situation is kind of an exceptional case of lucky casting IMO, so I don’t really expect them to hit the jackpot like that again.
