I know with Once ending that the podcast may eventually have to end too. But if the hosts are willing I have a few suggestions for topics that the podcast could cover after Once finally ends its run.
Starting with in depth characters podcasts where you discuss the overall journey each of the main characters took over the seasons and also how you would have liked their journey to go.

The Rumple cast (aka the gold and the grey)

The Emma cast (aka what the heck happened?!)

The Hook or Regina casts (aka they were more fun as villains)

The SwanFire cast! (aka this should have been endgame)

The Squid Ink cast (aka how exactly does Once magic work again?)

The Timeline cast (aka the one no one wants to tackle including the Once writers)

The Family Tree Podcast (aka why Alice should have been a Stiltskin)

The Dumb Idea cast (aka the one where you talk about Wish Realm a lot)

The Death cast (aka we still miss Graham)

The Theory cast (aka the one where you look back at all your old theories and play old podcast clips)
[adrotate group="5"]Some of these things you listed like “Regina, Hook or Zelena being more fun as villains” or “Swanfire should’ve been the endgame” gave me the feel of a possible revival of the show in the future. If they do so by putting it in Disney’s streaming service, I can see changes of narratives from the past seasons happening (which often happens), and possibly those two things above could happen in order to fix the show. But of course, the writers and creators (A&E) might be replaced by new producers cause of their errors. Who knows what might happen. I mean after Bob Igor mentioned they would love to do a revival of Home Inprovement for their upcoming stream, that is a hint they can do revivals. It might happen in the next five years and can be discussed in a reunion of a OUAT anniversary in 2021 (the old showrunners said they are saving their old season 8 project for a reunion).
Oh, there are tons of topics they could tackle. Character features, loose threads…

Do you think there’s any chance of the podcast become more topic-focused (themes, characters, etc), rather than simply ending, similar to how many of TrekFM’s shows work? For example, a podcast focusing on the various incarnations of Snow White.

I sincerely doubt it. We’re all ready to move on. It’s not that it hasn’t been great and I’m sure individually we’re all continue to talk about OUAT in someway (I honestly have no idea what is going to happen to the forums) but the podcast takes money, time, and energy–most of which we struggle with and the latter we find lacking as we draw near the end.
It is nice to hear that you guys want the podcast to continue in some manner. 🙂
