Ok….Adam and Eddy never said Rumple and Cora were soul mates….they said they were akin to soul mates. In other words, that although they weren’t, they could be very well thought of in that manner. It’s a matter of opinion, not a fact!

We saw him as pre-Dark One with Milah but they had very few moments of happiness but Cora is his soulmate in a lot of ways
Jane Espenson also called them soul mates in an interview.
They also called them kindred spirits.
