I don’t think we saw them all hatch at the same time. I think Grumpy just hatched earlier than expected. They could have all been born around the same time, between a day or two of each other and that would explain it.
OR
They are going by SB memory birthday instead of their actual FTL birthday. In their SB minds they probably all have different birthdays.
