Someone interrupts the wedding, probably the Black Fairy. That is why Josh and Regina are wearing their wedding clothes. Then there is some sort of rewriting with the storybook. That means all of the bits with Emma in the bright red new jacket are probably from after they defeat the Black Fairy.
