Not really keen on seeing another vampire or vampire story, but the idea with Van Helsing showing up as a colleague / friend of Victor sounds attractive.

Victor believed science is stronger than magic, and think that is still an interesting question to explore, in Storybrooke and / or The World without Color.

As they brought up the issue of duality, monster and human, monster or human. Of course that is something they explore with Rumple, Ruby and even with Philipp as well, a classical motif in fairy tales as much as in some Gothic fiction. But Dr. Jekyll and Mr. Hyde is another story I could see them do with this setting.

And would love some Edgar Allan Poe touch.
Once upon a midnight dreary …

Speaking of Gothic fiction:
Just read that ABC ordered a pilot for “Gothica”, a series which is decribed as a ” gothic soap opera” including elements and figures from Gothic fiction, meaning Frankenstein, Dracula, Jekyll & Hyde, Dorian Gray and others.
