I believe in the finale (or 1×21), they talk about “taking back the Kingdom” (meaning King George’s Kingdom) and that is why they are in George’s caste when Emma is born, etc.
I do believe Adam and Eddie talked about how they are definitely going to be telling us what happens to George in SB after he set up Ruby, so to me, what better way to tell that story but to contrast it with what happened to George in FTL… that time between the engagement and the wedding is the part that we don't know about yet…
