He doesn’t have to be using the face they’d recognize later. He might not even be using a face at all, maybe all they interact with is his voice.
One thing’s for sure: there’s no actor cast specifically to do this “mythical being”, so either it’s someone we already know or it’s a completely digital creature that won’t speak a word.

I think more than likely they never find the mythic creature. I bet Snow finds out she is pregnant and they give up the hunt in order to prepare for Baby Emma.

Then I’d have to question the point of the flashback in the episode. Like I said, its function in ONCE is to either parallel or explain events in the present.
