So why is he called the sorcerer then? And why did his own apprentice refer to him with a male pronoun?

How do we know whether the apprentice even knows the true identity of the sorcerer? For all we know, the sorcerer could’ve just disguised him or herself, keeping his or her identity under wraps, even from the apprentice.

The show has had an overload of female characters recently, anyway.

I don’t disagree, but this show does tend to be mostly about female heroes and villains. Plus, a lot of the target audience is female. What I’m basing my theory on, in part, is something that Emma said in 4×5. She said, “I know I’m not exactly sorceress of the year.” That word choice really stood out to me, and it seemed like it could be a hidden clue that the gender of mysterious sorcerer may be female, rather than male, as so many of the characters have assumed.

Perhaps the character of the author and/or the sorcerer has not been cast because they do not need to. Maybe we have already met both of them, if they are separate. For example, as @Slurpeez said, the author could be the BF (or someone else), and the sorcerer could be the BF or someone else.

I cant remember if it was the sorcerer or the author, but I know A&E said we hadn’t met one of them as in its not someone we know. Cant recall from where and I could be wrong, but yeah.
