Perhaps “untold stories” is literal in the sense that it’s various stories that Disney themselves has not yet done. After all, they did reference the fact that Walt was a previous author.

This is interesting. I just looked up some unproduced films of Disney and found one called…. Unclue Stiltskin:
In it, Uncle Stiltskin tries to get a child by spinning straw into gold. It doesn’t work, and he ends up getting a feral orphan girl who was raised by wolves instead. (You can’t make this up, people.)
