Knowing what we know now, I think taking Cinderella’s baby was a back-up for for Rumpelstiltskin. Remember, he needed True Love to create the Dark curse (for that safety valve). Rumpel probably thought, okay, if Charming and Snow don’t share True Love, he needs a back-up plan. He might have thought that he could extract the baby’s blood or something and use that as a substitute.
It might sound a little gross, but just a thought.

But I would like to know what he was planning to do with all those first borns he took. It seems to me like he became some sort of adoption agency type thing, but there has to be more to it. For him to take them seems almost counter intuitive given his past (unless, of course this army of firstborns were instrumental in achieving his goals). Perhaps that’s why he was drinking when he took charming away?

I’m also curious to know why he had an obsession with taking children. I heard someone say that traditionally it was the first borns who were sent off to battle, but I’m sure it’s more than that.

Also, he’s really, really lonely (as evidenced by the fact that he took Belle away), and having a kid around would help with that, especially a kid he would raise not to be scared of him.

I think he was crafty enough to know Charming would imprison him. He needed the name of their baby and knew they’d come to him in the cell. He knew Regina was enacting the curse so he played the Charmings for the name of their baby and Regina for wealth and comfort in their new home. I don’t think he ever really wanted the baby, but wasn’t above taking it if she did give in to the deal.

Great theory!
I think the man also just knows the value of a good baby… As creepy as that sounds… many people want babies (including their birth mother wanting them back desperately after they’ve promised them to him), so I think he knows that once he is promised a baby, it is a great bargaining chip…
Who knows what he got paid for securing Charming’s brother (not sure if they answered this or not, I didn’t notice)… or for securing Henry for Regina (but let’s face it, he “owns” Storybrooke, so perhaps that is what he got)…
So I don’t know for sure that it is a fascination for babies… but for their value because they are so precious.
