I agree with Nightreader that it won’t be the water.
A very cheesy theory is that the curse will be broken once Emma finds her true love … Along the journey to that ending, more and more people start to remember who they are. Emma is changing things in SB, getting happy endings to happen again (Cinderella, Hänsel&Gretel). I believe in the end she’ll have to find her own and only then will the curse be truly broken.
Corny, I know, but so are many fairy tales.

I think that people will remember when they become more themselves. I would think that ending the curse would happen either when the queen is redeemed or Rumpel is killed.

Grandpa David and grandson Henry are so cute together:

We haven’t seen any interaction there either … It’s backstage, but maybe we’ll finally see David in MM&Emma’s home? 😀

Do you see the old sewing machine?? So cool!

It’s quite interesting how much Emma takes after her father, David (aka Prince James). In FTL, Prince James is excellent at finding people, most notably, Snow White. He is very fond of saying to her, “I will always find you.” In SB, Emma, is also very capable of finding people. Before she became town sheriff, she made a living finding people as a bale-bonds person. In a conversation between Mary Margaret and Emma in episode 3, they said:

Mary Margaret: That’s an interesting job, finding people. How did you fall into it?
Emma: Looking for people is just what I’ve done as long as I can remember.
Mary Margaret: What made you start? Your parents? Henry told me that you’re, er, were from a similar situation to his own. Did you ever find them?
    Emma: Depends who you ask.

Emma is as tough, brave, and resilient in SB as her father, Prince James, was in FTL. Emma will defend Henry in the same way that Prince James defended her as a baby. Emma saved Henry from the mine shaft in episode 5, That Still Small Voice.

I also think that David, Mary Margaret, and Emma will be thrown together a lot more through the mystery of Kathryn’s disappearance. Since Emma will have to investigate both of her parents, it’ll bring them all much closer than we’ve seen thus far. Of course, if Henry has a part in it, he’ll be quick to remind them of how they are family. But also, I think that it’ll take a big reveal for Emma to actually start believing in the truth of the story, hopefully by the end of season one. However, I don’t think Mary Margaret and David will believe until next season.

I agree, she kind of has her mother’s looks but her father’s personality ^^ Not that Snow wasn’t kick-ass in FTL too of course, she totally gets her snarky replies from her mom ;P

Emma does share her mother’s sarcastic wit. I love the banter between Snow and James.

Snow White: You. You found me.
Prince James: Did you ever doubt I would?
Snow White: Truthfully, the glass coffin gave me pause.

In a similar vein, Emma has a funny way of putting things.

Emma: Hang on. The evil queen sent a bunch of fairy-tale characters here?
Henry: Yeah, and now they’re trapped.
Emma: Frozen in time, stuck in Storybrooke, Maine. That’s what you’re going with?

I’ll just say: “Where’s your mom? She’s going to kill me, then you, then me again.”
    Ok, getting off-topic, people!

Thank you slurpeez for the big post. You’re absolutely right, she’s a lot like Prince James. Hadn’t realised it yet. And I agree that the whole Kathryn plot will bring them closer.
Oh, I hope they male Henry say: you're investigating your own parents? xD (or something around those lines)
I think it’s a spoiler, if you haven’t read plot summaries and/or watched the promo.
