I actually think Henry and Emma were meant to parallell Snow and Charming. Throughout the season, EQ/Regina did everything she could to keep Snow/Mary and Charming/David apart and that was reflected in the relationship between Henry and Emma as well. And in both FTL and SB, events culminated in the use of the poisoned apple – first with Snow and later with Henry. It just so happens that both Snow White and Sleeping Beauty are stories which use similar elements regarding the heroine’s fate.
However, Season 1 of the show was definitely themed around Snow White. If Sleeping Beauty were to be introduced, then certain elements can be used to make things different. For instance, when Snow White fell victim to her particular curse, only she was affected. In Sleeping Beauty, not only was Aurora put to sleep, but everyone within the palace was and briar/bramble/vines grew up around the place.
Also, in Snow White, the sleeping curse was applied to an apple by the Evil Queen. In Sleeping Beauty, Maleficent cursed the child should she ever prick herself on a spindle. In show, this could be something blamed on Rumple since the spinning wheel is one of his tools.
