You’re right….K&H said in a podcast, back in May – Mr. Gold did not have his memory back until he heard Emma say her name at Granny’s B&B.

Would be why he asked Snow for the baby’s name and why he wrote it over and over again.

Another one of his ‘safety valves’ written into the curse.

Silly me, thought rumple had his memories the whole time. That point someone made about the importance of him knowing Emma’s name. Makes sence. That’s why these forms are good so people can show you what you missed
