Great post, Mysterykat! I can’t think of anything to add except possibly Emma’s suggestion that chimera is “like Tur-Duck-En?” but that is a stretch. It’s so hard to find fresh chimera!

I would love to see a cookbook started…and I love the cocoa and cinnamon cupcakes pictured. What a great idea!

… read direction cause there need to be prep-work done in advance.4 dried black mushrooms….
Covered in boiling water to reconstitute
1 / 4 cup dried fungus …..
also covered in boiling water but in a separate bowl. Let soak overnight. Remove and discard any stems or woody parts.1/2 cup julienne lean pork ( julienne means to cut in fine sticks length wise)
1/2 tsp salt
tsp corn starch …. Use to dust pork…. Then stir fry the pork in wok till well cooked. ( Can use sauted x 5 minutes chicken … slightly different flavor)1/ 2 cup bamboo shoots, julienne
2 tablespoons oil….
I sometime use Chinese Chili oil , sesame oil to add flavor. I usually have bottles in my panty.6 cup of Chicken stock…. Keep ½ to 1 cup set aside to add later.
I often make my own and will add julienne chicken strips to the recipe. Bring stock to boil and add the pork ( Chicken too) Add mushrooms, bamboo shoots…. Stir constantly. Lower temperature to a simmer … add the following seasonings.
2 TBSP light soy sauceFavorite brand: Maggi Sweet Garlic Chili Sauce….. add to taste start at tablespoon full… I add more!
1/2 tsp pepper
3 TBSP vinegar… I frequently add rice wine vinegar but any type will do.
Thicken by using 2 tablespoon cornstarch added tp the reserved broth or water. Add to stock while stirring …
Add 2 pieces of FRESH BEAN CURD (4 to 8 oz) cut into thin strips. Bring to a boil.
Turn off the heat…. Add 2 beaten eggs while stirring
Add tbsp sesame seed oil
Garnish with 2 scallions cut into one inch pieces ( like they do in a fancy Japanese or Chinese restaurant.) Angelina did not like scallions so I usually kept it on the side and garnished as needed.Can make the dish spicier to taste by adding pepper and more vinegar.
Serve Hot…. Can be kept heated in a crock pot.
This soup can be interrupted at any time during the cooking process without any problems, except for adding the eggs. Once they are added and stirred it is okay but they get ugly if you add the eggs and do not stir the pot.
This serves 6 people and it taste even better the second day.

Traditionally Chimera’s were supposed to be part lion, goat and snake (don’t remember what they said in the show). So you could visit an Exotic Meat Market http://www.exoticmeatmarkets.com for supplies. If I had a deep fryer, that would be what I’d try (because that was what people on the show Top Chef did with rattlesnake…and the comment of the judge was, you can fry anything and make it taste good..probably a necessity for this “chimera”).

I’m hoping to do a rewatch and take note of more of these over the next break to get the list completely up to date but I was so mesmerized by a new episode I totally forgot about it!
