Regina pretended to be rude to him when her mother was watching. She apologized when they were alone, but of course, she was in love with him. We didn’t see how she treated the rest of the help.
Would she have fallen out of love? In the real world, what you say is probably true about running away and facing a harsh life, but they were in FTL. She might not have had skills, but Daniel did. If she truly would have been content to just ride horses and run a stable, then it is not hard to imagine an alternate universe where she and Daniel ended up running the stables at say, Snow’s palace. Leopold was kindly, he could have taken pity on them.
The more important thing though is that Regina is not as aware of herself as she should be. I agree with what you say about how she was dominated and has not really sat down to ask what truly would make her happy as opposed to what makes others unhappy. She cast the curse with the idea that if everyone else lost, she would win (and winning would make her happy).

As KFChimera said, Regina immediately apologized for snapping at him once in front of her mother. In private she was very kind to him. She treated him as an equal, and Daniel was the one person around whom she could really be herself. Had they successfully run away together in EF, she very well could have found who she was and have been happy. She wouldn’t have had Cora planting false ideas and trying to mold her into someone she wasn’t for a start. Daniel wasn’t like Cora’s drunk father, and the two could have found a way to survive and even thrive together. She could even have helped teach riding to young children. She wasn’t exactly unskilled herself. Plus, she was smart. Regina at that time didn’t care about riches or have any interest in politics. She seemed to value simple happinesses, the likes of which her parents didn’t have in their lavish home.
I think losing Daniel was in many senses Regina losing the opportunity to become self-aware. She lost her love, her only friend and confidant, and her freedom all at the same time. It’s a shame she went on such a dark and downward spiral afterwards.

I think Regina is going to do her old trick on Hook, remember she told him the last time before the curse that he would have Gold but forgot to tell him that he wouldn’t have any memory. I guess if she thought it worked the 1st time why not try it again. 😆
