I think there is zero chance that Anastasia is the guardian.
I think it’s more likely she’s just one of the 8; everything about the way the story was told and set up screams red herring with Anastasia.

We have never seen that before. Also, she could sense magical things around her. She sensed the dagger and sensed Gothel. The fact that it was more then just the dagger that she sensed is probably important. She might just be really powerful. I imagine she will end up hurting someone with that magic.
