She could have seen him sometime when he was with Snow and Charming. We don’t know how often she visited the Enchanted Forest or what she did. It isn’t necessary that she ever kidnapped him or killed him. She just knows what he looks like and that he knows Snow.
Not that i am saying this is what the writers will do, but they don’t really need to explain why Lancelot is alive and there.

In all honesty, I think he really could be hinting at this being answered. Why? Because I’m sure Hook will attempt to use true love’s kiss to break Emma’s curse. It won’t work, and that could be when we get an actual explanation as to why it never worked with Rumbelle, aside from Belle’s initial attempt. Though that initial attempt was interrupted by Rumple.
