I’ve been rewatching the series in anticipation of the season finale, and I haven’t found an answer.
Do we actually know why?

KeymasterI really wish I could answer this for you. The sad fact is that we’ve only seen two Dark Ones, Zoso and Rumple. The Curse seemed to change Rumple’s physical appearance radically while Zoso was not changed as extreme. My own theory is that the Dark One’s curse affects people differently. I would be interested to see other Dark Ones and how they look to test if I’m right.

ParticipantI have wondered this many times. And there is a great deal of change in Rumple’s appearance AS the Dark One. Zoso may have had the power longer so it may have worn off a little?

ParticipantZoso did appear scaly when he wasn’t trying to hide his appearance. We have not seen Rumple attempt to hide his appearance very much as the Dark One–he clearly has the ability but rarely has the desire to.
One thing that sticks out in my mind is Belle’s speech to him–“no matter how thick you make your skin, that doesn’t change…” which makes me wonder if he has the ability to change the scaliness (we know due to makeup shifts, its appearance isn’t always consistent–but it also seems thicker when he’s crazier and thinner when he’s saner), or if it reflects his inner mindstate somewhat. Of course, Belle doesn’t know all the details of his curse, so she might just be flinging words at him at that point–but it could be a clue.
The more interesting question, since the change happened as soon as he killed Zoso, is why he didn’t revert when he brought back magic. The only answer I’ve been able to come up with for that is: We are both. It probably has to do with the same clause of the curse that allows Archie to remain human.
