It’s Sidney. If they were treating Wonderland better, it’d probably be Cyrus* (and possibly use Jafar’s bottle), but they’re not.
*Although, I personally prefer Cyrus being Aladdin’s genie, over Sidney, due to characterization and, you know, his involvement with defeating Jafar on Wonderland.

Maybe Rumpel is taking the place of Grunkle Stan, and Morfetus is OUaT’s version of Widdle Gideon. Because, WHY NOT!? This show has used everything else!
Notably, both Rumpel and Stan run shops in towns, where strange things happen, and there’s a mysterious Author, who wrote a mysterious book. Both Gideons hate this character.
