Maybe the writer of the book only knew that part of the story. Like they met Hansel and Gretel sometime after the events of their story, but before the curse and so he only knows their point of view.

I also thought that Gold must be listening in on Emma and Henry’s conversations over the walkies. We will see i guess.
Henry came into the Sheriff’s office and said he figured out who the two kids were. He said they were Hansel and Gretel. So Emma asked does it say anything about their father because she was looking for their father in the real world. And Henry said all it says was that he abandoned them.
I think that Regina wasn’t born yet when Rumpel had Balfire so i think it is not possible that she could be his mother.
I don’t think it is Kathryn. Though the Siren can become any woman she wants to. There are photos from this episode. Here is one of the siren.
