Yeah it was SO CREEPY. I cringed at the same time that I was going, “Woah, that’s what the keys are for!”
And she vandalized MM’s car in this episode too! Real mature! How low won’t that woman go? Tsk.

But I guess that doesn’t make sense anyway because Regina wants to keep all the couples apart so she wouldn’t send Fred where Kat went. Oh well.

I believe that the curse would have happened whether he “helped” Regina or not. It was SO OBVIOUS what she did wrong that she WOULD have figured it out eventually. She’s not stupid–she was just lazy and didn’t take the time to think it through; but if he’d refused to “help” she would’ve gone over it again and figured it out. So therefore why make her mad when you could just answer her question and get a sweet deal out of it to boot? He’s the type to take advantage/make the best of every situation. That’s all he was doing.
As for giving it to her in the first place, I don’t think that he traded it to her planning to break it in the future because you’re right the best way to avoid that would be to not trade it. But he probably got something REALLY good out of that deal. And apparently he traded it to her when she had no plans of using it because if she had planned on using it back then she would not have traded it afterwards to Maleficent. Plus, he may have thought “If she uses it, I’ll deal with it then.” And now that she has he is.

As for the miller’s daughter being obsessed with gold–I don’t think she actually was. None of the gold that Rumple spun was for her and she gave up the only gold she had–her jewelry–on the first night in exchange for his help. And she doesn’t have the ability to spin gold herself, as far as we know.
I think she is obsessed with apples though, like you said, and that has to do with the Snow White fairy tale. It may or may not exclude her from the Rumpelstiltskin story. I don’t think it does exclude her because we know the writers like to do cross-overs. Rumple + Beast is the biggest and Snow’s Stepmom + Miller’s daughter seems a lot less far-fetched than that one.
